Almond Milk Nog Cake Loaf Recipe

Nog Cake Loaf recipe has been at the top of the holiday drink list for as long as I can remember. It’s a great dessert that hits the spot with a hint of bourbon, a dash of cinnamon, and whip cream to top it off. But it is always to mix things up a bit and I thought why not eat your nog instead of drinking it. I turned a traditional festive drink into a sweet loaf that can be perfect for a sweet tooth or even a special holiday morning breakfast. So retire your moose ear drinking glasses and grab a fork for a this fluffy, sticky, and oh so sweetloaf.

Ingredients:

For the loaf 

  • 1 cup powdered sugar 
  • 3/4 cup almondmilk nog
  • 1 tbsp. flaxseed meal 
  • 3 tbsp. warm water
  • 1/2 cup butter; melted
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon 
  • 1/4 tsp salt

For the glaze

  • 1 cup powdered sugar, sifted
  • 3 tbsp. almond nog 
  • 1/2 tsp vanilla 

Directions:

  • Preheat your oven to 375 degrees. Line a loaf pan with parchment paper or if you prefer oil and dust with flour.
  • In a small bowl, whisk flaxseed meal and water to make a flax egg. let sit for 5 minutes.
  • In a standing mixer, add powdered sugar, butter, flax egg, and almond nog. mix on medium speed until all ingredients are well combined. Turn off the mixer.
  • In a separate mixing bowl, combined flour, baking powder, cinnamon, and salt.
  • Turn mixer back to medium speed and slowly add in flour mixture until completely dissolved. The dough will be sticky. Pour into lined or oiled loaf pan and bake in the oven for 35 minutes or when the center is no longer raw when pierced with a fork.
  • While the loaf is baking you can make your glaze. Mix together powdered sugar, vanilla, and almond nog for 1-2 minutes.
  • Remove loaf from oven and let cool completely before adding glaze so it does not melt.

    Is it baking soda or baking powder? Ingredients say powder but directions say soda….I made one yesterday using baking powder and the cake is great but I want to make another so I was wondering which to use for sure.
