Vegan Banana Zucchini Muffins Recipe

These little muffins are so scrumptious and are the perfect little lunchbox fillers.


1.5 cups wholemeal spelt flour
1/3 cup rolled oats
1/2 cup coconut oil
2 large ripe bananas
1/2 cup grated zucchini
1/3 cup coconut sugar
1-2 tsp vanilla extract
2 tsp cinnamon
Pinch of pink salt
Handful of currants
1 tsp baking powder


1. Mash bananas and stir through melted coconut oil, coconut sugar and vanilla.

2. Mix in the dry ingredients and pour into mini muffin trays to make approx. 20 muffins.

3. Cook at 175*C (350*F) in the oven for 16-18 mins.

    I tried mixing all the ingredients but the mix was very dry and sticky so I added 2 cups of soy milk. I’m now waiting for them to be ready. It’ll be our afternoon snack. I always looked for easy recipes so my kids would join me in this vegan journey but never found anything, until I found you guys! Thank you!
