Bean and Cheese Vegan Quesadillas

Bean and Cheese Vegan Quesadillas

These are one of those recipes, where even after the sixth time you’ve made it this week, you’ll still crave them! Our kids get so excited when we say we’re having vegan quesadillas for dinner, and I bet yours will also!

Ingredients

  • 4 tortillas, we have to use the gluten-free, but any kind is fine.
  • 1/2 cup refried pinto beans
  • 6 Tbsp vegan cheese
  • Half a Spanish onion chopped
  • 1 Tomato diced
  • 1 avocado cup up and mushed.
  • 2 tsp of vegetable oil

Instructions

  1. Heat up your pan on the stove-top
  2. Spread the beans on one tortilla and set in the pan. a decent sized handful of cheese on top and set another tortilla on top as a sandwich.
  3. cover the pan 90% of the way for a few mins, and allow the cheese to melt.
  4. Flip over the tortilla to the other side, and toast. Serve with chopped onion, diced tomato, and a beer if you have one!
