I love this citrus, beet and arugula salad recipe. The sweetness of the oranges really compliments the peppery arugula and the earthy flavor of the beets. This really is a wonderful dish to make if you’re trying to lose weight as it’s incredibly filling and you don’t compromise on taste. It can make a great side dish for any meal, and I think it makes a wonderful lunch or dinner on its own.

Citrus Beet And Arugula Salad Recipe

Ingredients

  • 2 small tangerines, peeled and sliced
  • 1 medium blood orange, peeled and sliced
  • 3 cups packed baby arugula
  • 2 large roasted, peeled and cut in half-moons
  • 2 tablespoons lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped fresh tarragon
  • ¼ teaspoon salt

Instructions

Combine tangerines, orange, arugula, lime juice, oil, tarragon, roasted beets and salt in a medium bowl. Toss and serve.

It’s as simple as that!
