Coconut Curry Sauce with Cilantro Lime Rice

Something easy to make for the family while winding down the weekend. This coconut curry is always a winner around the table, with minimal clean up, it’s an impressive dinner all round!

Coconut Curry Sauce

  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp coconut oil
  • 2 Tbsp quinoa flour
  • 1 Tbsp curry powder
  • 1 can unsweetened coconut milk
  • 1 Tbsp lime juice
  • 3 Thai basil leaves, whole
  • 1 tsp agave nectar
  • ¼ tsp salt

  1. In a sauté pan, heat oil over medium heat. Once hot, add onions and sauté until they start to sweat about 3 minutes. Add garlic and cook an additional 2 minutes.
  2. Mix curry powder and flour together and add to pan to coat onions and garlic.
  3. Add coconut milk, agave nectar, and lime juice to deglaze the pan.
  4. Stir until well combined and bring to a boil.
  5. Once boiling, add Thai basil leaves and salt.
  6. Reduce heat and simmer for about 10 minutes to allow the sauce to thicken.
  7. Remove from heat and take out the leaves.
  8. Serve immediately over rice.

Cilantro Lime Rice

  • 1 cup basmati rice, cooked
  • 1 Tbsp lime juice
  • ¼ cup fresh cilantro, chopped
  • 1 Tbsp vegan butter, melted
  1. Add all ingredients in a bowl and mix thoroughly.
