INGREDIENTS
9 tbsp aquafaba (chickpea water)
4 cups icing sugar
2 tsp clear vanilla extract
⅛ tsp cream of tartar
INSTRUCTIONS
With an electric mixer (let’s call it an eggless-beater) whisk the chickpea water until it gets foamy.
Add ⅘ of the sugar to the mixture and mix on high speed until you have a thick, glossy mixture.
Add the rest of the sugar, cream of tartar and vanilla extract and continue to mix until you get soft peaks.
Your icing is ready, and will keep for a couple of days at room temperature if covered.
