New Vegan Egg Biscuit Sells Out In Three Hours

Winter Park Biscuit Co’s pop-up in Florida drew a crowd with its plant-based sausage and vegan egg biscuit.

Vegan pop-up Winter Park Biscuit Co. debuted a new biscuit sandwich to a crowd of Floridians, who lined-up around the block to sample the new product featuring the Just Egg vegan egg replacement, and boy did they like it a lot! There were so many people waiting to try the new product that it sold out in three hours.

Developed by Mary Mattern, a vegan chef, the ‘Sasage Just Egg and Cheez’ biscuit was a big hit with Floridians. Mattern, former personal chef to vegan musicians such as Ellie Goulding and Blink-182’s drummer Travis Barker, is trying to establish the pop-ups brick and mortar location while Winter Park Biscuit Co continues to travel around Florida hosting multiple pop-up locations.

Food technology startup, JUST, last year debuted their mung bean based vegan egg replacer at San Francisco eatery Flore, before expanding Just Egg to several restaurants and eateries around the country including Veggie Grill where they use it as a filling inside their all-day breakfast burrito.

The Just Egg was a project five years in the making, with years of research, trial and error to create the formula which the company is confident they have perfected. The mung bean egg they created mimics scrambled egg in its fluffy consistency and almost in its taste.
