It can cleanse your palate and open you up for the main course. This particular soup is prepared with an oriental twist. The sweet and tangy broth with crunchy veggies and fresh moong bean sprouts is a healthy and nutritious way to start a meal.

Ingredients

  • Carrot: Shredded finely; ½ cup
  • Cabbage: shredded finely; ½ cup
  • Red bell pepper: Shredded finely; ¼ cup
  • Ginger: ½ tablespoon
  • Tomato puree: ½ cup
  • Salt to taste
  • White pepper powder to taste
  • Brown sugar: to taste
  • Corn flour: 1 tablespoon
  • Tabasco sauce: 1 tablespoon
  • Rice vinegar or regular vinegar: 1 tablespoon
  • Light soy sauce: 1 tablespoon
  • Vegan oyster sauce: 1 teaspoon (optional)
  • Vegetable stock: 100ml
  • Water: around 200ml
  • Bean sprouts to garnish
  • Sesame oil to garnish: optional

How to prepare

  • Heat a tablespoon of olive oil in a soup saucepan. Add in the ginger and toss for a few seconds.
  • Add the finely shredded veggies and toss enough to preserve its crunch.
  • Add in the soy sauce, oyster sauce, Tabasco sauce, tomato puree, and vinegar. Toss until fragrant.
  • Now add the veggie stock and water and bring the soup to a boil.
  • Take some water and make a corn flour slurry and add in the soup until it looks semi- thick. Add some more if required.
  • Now add the salt and pepper and brown sugar to taste. The taste should be a perfect balance of salty, sweet and tangy.
  • Serve in quarter soup bowls as a starter. Garnish with fresh bean sprouts and a dash of sesame oil in each bowl.

P.S. You can use tomato ketchup in place of puree.
