Sweet Potato Toast

Why… Why might you ask? Well, sweet potato toast is just delicious and simple and a great way to mix things up a bit. Now, you can top your sweet potato toast with any topping you like. I love mine with fried mushrooms, cherry tomatoes, wilted spinach and some homemade pesto and avocado cream (just plain old avocado will do too).


Sweet potato (cut length-ways).


Cherry Tomatoes



Pop the sweet potato in the toaster for a few minutes. You might need to do it a couple of times to get the desired consistency.

Saute the mushrooms in a little bit of coconut oil then add the tomatoes.

Add the spinach to the mushrooms and tomatoes at the end and let it wilt.

Top with a pinch of Himalayan salt and a drizzle of avocado cream or some mashed avocado with lemon juice and Himalayan/Celtic salt.
