The Best Vegan Christmas Cookies Recipe
One of my favorite things to do every year is to make vegan Christmas cookies with my kids. They love to cut out the shapes and decorate them. We always leave a couple on a plate for Santa, and every year he devours them.

Ingredients – Vegan Christmas Cookies
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup white sugar
- 1/2 cup vegan margarine
- 1 teaspoon maple syrup
- 2 tablespoons coconut milk
Directions

Preheat oven to 350 degrees F
Line 2 baking sheets with parchment paper.
Grab a medium sized bowl and sift in the flour, baking soda, and salt.
Cream sugar and vegan margarine in a bowl for 2 minutes, add maple syrup, then stir in the flour mixture.
1 tablespoon at a time, add coconut milk until dough comes together.
Wrap the dough in saran wrap and chill in the refrigerator for 30 minutes.
On a floured surface, roll out the dough to a 1/4 to 1/2-inch thickness.
Dip cookie cutter in flour; cut out cookies and place them on the baking sheets.
Bake cookies in the preheated oven until lightly golden, ovens vary but it should take about 10 minutes.
- 2 cups all-purpose flour

Leave to cool on a wire rack while you make your icing.
Icing Ingredients
- 2-1/2 cups confectioners sugar
- 2 tablespoons light corn syrup
- 1 to 2 tablespoons of almond milk (add more as needed to get the right consistancy 1/2 tsp at a time)
- Vegan food coloring
Directions
Mix the powdered sugar, corn syrup and almond milk in a bowl with a fork until smooth. If it seems too thick, add more almond milk 1/2 tsp at a time. If it looks too runny, add more confectioners sugar 1 tsp at a time. (Consistency should be thin enough to drizzle but thick enough to retain its shape and your best yet vegan Christmas cookies)
Separate into small bowls and add a tiny bit of food coloring if you want to use a few colors.
Transfer your icing into an icing bag and decorate your cookies.
Leave to set for about 5 minutes.

Voila, festive vegan Christmas cookies. Yum!!
