I love, love, love a salad. Especially one that is so simple to throw together. This one is light and great for summer.
Adding some warm roast vegetables will make this even more filling and wonderful on a cooler day.
YOU NEED •
1/2 grapefruit (diced)
Handful of mixed salad leaves chopped
Half a red pepper diced
Half a carrot shredded
1/4 cup of toasted pecans
1/4 cup of goji berries
Tablespoon of olive oil
Tablespoon of apple cider vinegar
Combine all ingredients in a bowl & dress with olive oil and apple cider vinegar.
Top with a sprinkle of chia seeds.
Serve with avocado, fresh herbs (I’ve used coriander here) and some sauerkraut.
