Vegan Breakfast You Can Make In Less Than 15 Minutes

by | August 11, 2018

It’s almost back to school time, and that means lots of early mornings and scrambling to find a quick, filling, easy vegan breakfast.

I don’t know about you, but I am definitely not a morning person. Getting out of bed before the clock hits double digits is something I dread with every fiber of my being. But the lazy summer mornings are coming to an end and that means you need to find a vegan breakfast that you can make in no time so that you can get the kids dressed and out of the house and on the way to school.

Kid-Approved Vegan French Toast

This breakfast might look like it takes a lot longer than 15 minutes, but really the longest part of making it is getting the ingredients ready. Super delicious and warm for those chilly mornings that are sure to be coming around soon. Check out the recipe HERE.

Rainbow Breakfast Potatoes

This super simple and colorful vegan breakfast recipe is the best comfort food, and you can sneak a lot of veggies in there too! Perfect for picky eaters. It’s a hot breakfast, so it’ll keep your kids full and warm on their way to school. Check out the recipe HERE.

Western Style Tofu Scramble

Want a vegan version of scrambled eggs? Look no further! This scrambled tofu recipe is easy and quick and actually has the same consistency as an egg. Plus, just like the breakfast potatoes, you can pack a lot of veggies in there without your picky kids realizing. Check out the recipe HERE.

Peanut Butter Cup Granola

Ok, so maybe not the healthiest option, but hey, who doesn’t love a vegan breakfast treat sometimes? I know I do for sure! This recipe is simple and can be made the night before so all you have to do is transfer it to a smaller bowl in the morning for your kids. And I guarantee you, they’ll move quicker if you tell them they can have chocolate for breakfast. Check out the recipe HERE.
