Vegan Cranberry And Pecan Flapjacks Recipe To Try This Christmas

My mom used to make flapjacks all the time when I was a little kid. Now I get to make them for my family. I like to swap out the ingredients to match the season, so here is my recipe for yummy vegan cranberry and pecan flapjacks. Follow my recipe below for a delicious and somewhat healthy vegan Christmas snack.

Ingredients

Makes 12

  • 2 ½ cup oats
  • 1 cup vegan butter
  • 1 cup light brown sugar
  • 3 Tbsp golden syrup
  • ⅓ cup chopped almonds
  • ⅓ cup dried cranberries

Instructions

Preheat oven to 350 degrees Fahrenheit and line a 9″x 9″ baking tray with baking paper. Over a medium heat mix the butter, sugar, and syrup in a large saucepan, until butter melts and the sugar and syrup have dissolved. Take the saucepan of melted butter, sugar and syrup off the heat and stir in the oats, almonds and cranberries, until thoroughly mixed. Transfer the flapjack mixture to the baking tray and press firmly with the back of a spoon. Bake your flapjacks in the oven for 25 minutes until golden brown around the edges. Allow to cool in the tin for 10 minutes. Cut into 12 squares. Vegan Cranberry and Pecan Flapjacks are ready!

You can eat these still warm or keep them in the fridge for up to one week.
