Vegan Meal Prep Pho: Delicious, Quick, and Easy!

Looking for a delicious vegan meal prep recipe that doesn’t take hours to cook? Here’s one I am sure you’ll love.

The Spring sickness is still making its rounds and sometimes, soup is the only thing that seems like it actually helps in your mission to feel better. Change up your typical vegan take on “chicken” noodle soup and try out a Vietnamese favorite- pho! Between the garlic, ginger, and lime in this recipe, you’ll be feeling like your old self in no time.

Pho is great because you can add literally any vegetable that you want to the soup broth, making this also suitable for the whole family to join. To meal prep ahead, make the broth and set aside the vegetables that you want to include in a mason jar. Simply heat up the broth and then add to your vegetables in order to enjoy at work. Here is a simplified recipe for making vegan meal prep pho at home.

To Make the Broth

Ingredients:

  • 6 1/2 cups vegetable broth
  • 1 1/2 cups water
  • 1/2 tsp clove
  • 3 pieces of star anises
  • 1 inch of fresh ginger, sliced
  • 3 cloves of garlic, chopped
  • 1/2 stick of cinnamon
  • 1 tbsp low sodium soy sauce
  • 1 tbsp fresh lime juice
  • Salt to taste

Instructions:

  1. In a large pot, use a small amount of oil to fry the garlic just until it is aromatic.
  2. As soon as the garlic is done, add the ginger, vegetable broth, water, and soy sauce to the pot. Bring to a boil before lowering to a simmer. Let simmer for 10 minutes.
  3. Create a makeshift tea bag of the clove, star anise, and cinnamon and let steep for 20 minutes while the broth is simmering.
  4. Add lime juice and salt if needed.

To put it all together

Ingredients:

  • 1/2 package rice noodles, prepared
  • 1 block tofu, drained and pressed
  • 1 cup of shiitake mushrooms
  • 1 hot red pepper, sliced into rounds
  • 1 daikon radish, peeled and sliced
  • 1/4 cup green onion, sliced
  • 4 basil leaves
  • 6-8 sprigs of cilantro
  • 2 fresh limes

Instructions:

Separate your broth into 4 servings, whether it’s for meal prep or for tonight’s dinner. Garnish with all of the toppings in order to create a pho soup tailored to you. For meal prepping, keep garnishes and broth stored separately until you are ready to combine them to eat.
