Vegan Rice Cake Snacks 3 Ways, Great for Kids!
Looking to spruce up one of your favorite healthy snacks? Look no further! Featuring a peanut butter and banana recipe, a Lunchables-inspired plant-based pizza, and an avocado “toast” recipe, there is bound to be a combination your kid is sure to love. Here are three simple, delicious and kid-friendly ways to turn a plain vegan rice cake into a yummy and filling morning or afternoon snack.

Vegan Rice Cake Snacks 3 Ways, Great for Kids!
Protein and Potassium – Peanut Butter and Banana
Ingredients:
- Rice cakes
- Sugar-free organic peanut butter (even better, you can easily make your own peanut butter at home! Click the link here to learn how)
- Banana
- Chia seeds
- Dried cranberries
Instructions:
- In a small bowl, mix together the peanut butter, chia seeds,
and dried cranberries. For 1/4 cup of peanut butter, add 2 tsp chia seeds and 1 tbsp dried cranberries. - Chop the banana into thin discs.
- On a vegan rice cake, smother on a generous helping of the peanut butter mixture. Artfully place on the slices of banana to fit as much as you can!
- Enjoy in the morning with non-dairy chocolate soy milk for kids or with a large cup of coffee for yourself.

Lunchables-Inspired Vegan “Pizza”
Ingredients:
- Rice cakes
- Pizza sauce
- Shredded vegan mozzarella cheese of your choice (Daiya, Follow Your Heart, Violife, etc.)
- Vegan pizza pepperoni
Instructions:
- On a rice cake, spread your favorite pizza sauce (I like using one with basil).
- Top with a generous amount of vegan cheese and vegan pepperoni.
- Let your kids enjoy with an organic juice box and a couple of Oreos for the full “Lunchables” experience!
Loaded Avocado “Toast”

Ingredients:
- Rice cakes
- Avocado
- Chickpeas
- Vegan mayonnaise
- Fresh lemon juice
- Salt and pepper to taste
Instructions:
- In a bowl, roughly mash together avocado, chickpeas, plant-based mayo, and lemon juice. Add a pinch of salt and pepper. For 1/2 avocado, use 1/4 cup chickpeas and 2 tbsp of plant-based mayo.
- Spread the mixture over a rice cake, topped with another pinch of salt and pepper.
- Enjoy with a small fruit salad or sweet potato fries!
