Gluten-free vegetable spring roll lettuce cups with garlic tamari sauce

One of my favorite go-to meals for fresh flavors and a natural crunch is a vegetable spring roll. I love the snapping sound of the vegetables, you can actually hear yourself getting healthier. But as much as I love them and the low caloric intake, there is a time-consuming task that comes with it. You guessed it, packing and rolling them. Now, usually it’s not a problem, but when I have a two-year-old tugging at my arms something faster could definitely come in handy. Lettuce cups to the rescue! It easily cuts down the time in half and you get a nice added crisp to every bite.

Vegetable Spring Roll Lettuce Cups with Garlic Tamari Sauce (Gluten-Free)

Ingredients

For the lettuce cups

  • 2 cups carrot, shredded
  • 2 cups red cabbage, chopped
  • ¼ cup green onion, chopped
  • ½ cup chopped raw cashew
  • 1 medium ripe avocado
  • 4 oz. gluten-free rice noodles, uncooked
  • 10 romaine lettuce leaves, rinsed and dried

 

For the sauce

  • ½ cup gluten-free low sodium tamari
  • ½ tsp garlic, minced
  • 1 tsp fresh green onion, minced
  • 1½ tbsp. agave nectar

Directions:

  1. In a large bowl, mix carrots, cabbage, green onion, and cashews. Set aside.
  2. In a separate mixing bowl, add tamari, garlic, green onion, and agave nectar. Whisk until well combined.
  3. Cook noodles according to the package. Drain and rinse with cold water to prevent sticking. Lightly toss into vegetable mixture.
  4. Cut avocado, remove pit, and dice. Carefully fold into noodles and vegetables.
  5. Pour ¼ cup tamari garlic sauce on top and carefully mix until thoroughly combined.
  6. Scoop ¼ – ½ cup of mixture into lettuce cups.
  7. Top with sesame seeds for an added crunch and use the extra sauce for dipping!

 

Note* If you would like to prepare this ahead of time, keep all veggies and noodles together and add the sauce at the last minute to keep it from getting mushy.
