
Vegan Matcha Oat Flour Pancakes
Pancakes are the perfect weekend breakfast, but not always the healthiest. Breakfast is said to be the most important meal of the day, so why not combine the delicious with the healthy for a real win? Start off your day with this recipe for a balanced breakfast by Katie Conn of The Connscious Plate.
Naturally gluten-free and nutritiously dense, these pancakes are made with oat flour and a sprinkle of matcha. The matcha powder used in this recipe includes a blend of other superfoods like ashwagandha, cordyceps, and ginger.

Vegan Matcha Oat Flour Pancakes
Ingredients
- 1 cup rolled oats
- 1/2 cup nut milk
- 1 ripe banana
- 1 tsp of vanilla extract
- 1 tbsp of maple syrup
- 1 tsp of matcha powder
- 1 tsp of baking powder (optional)
- 1/2 tsp of salt
Instructions
- Place all of the ingredients in a blender and blend until smooth. You may add a little more milk if the batter seems too thick, but the batter should be thicker than most traditional pancake batters so that the pancakes bind together.
- Cook over medium heat with about 1 minute of cooking time per side.
- Enjoy with nondairy yogurt, fruit, nuts, or other toppings of choice.
