Breakfast Tex-Mex Inspired Guacamole And Bell Pepper Boats

Do you want to use up all of those bell peppers you got on sale at the farmers market this weekend? Look no farther because you can make bell pepper boats for a family breakfast easily. Featuring vegan substitutes for chorizo, eggs, and cheese these Tex-Mex inspired breakfast guacamole and bell pepper boats are without a doubt a great comfort food. This recipe can be modified to be healthier as well- swap out the soyrizo for black beans, the rice with quinoa, and the vegan egg with a basic tofu scramble for a protein-packed breakfast. Here is how you can indulge in some breakfast Tex-Mex guacamole and bell pepper boats.

Breakfast Tex-Mex Inspired Guacamole And Bell Pepper Boats

(Serves 4)

Ingredients:

  • 1 large red bell pepper (halved longways)
  • 1 large green bell pepper (halved longways)
  • 1 cup cooked long grain rice
  • ½ link soyrizo (vegan chorizo)
  • 2 servings Follow Your Heart vegan egg
  • ¾ cup shredded vegan cheese
  • ¼ cup green salsa
  • cilantro
  • ½ tsp lime
  • salt and pepper to taste
  • vegan sour cream
  • guacamole

Instructions:

  1. Preheat oven to 350 degrees.
  2. In a deep oven-safe dish, put 1 inch of water in the dish followed by the halved bell peppers face down. Cover with aluminum foil and bake for thirty minutes.
  3. While the peppers are baking, cook the soyrizo according to the instructions on the package, season with salt and pepper. Set aside.
  4. Cook the vegan egg according to the given instructions, season with salt and pepper. Set aside.
  5. In a large bowl, mix together the cooked soyrizo, vegan egg, rice, green salsa, and lime.
  6. Once the peppers have cooked for thirty minutes, remove from the oven and carefully transfer to a plate.
  7. Fill the pepper halves with the mixture and top with cheese.
  8. Cover again with foil and put back into the oven for five minutes or until the cheese has melted.
  9. Top with an extra spoonful of green salsa and cilantro.
  10. Serve immediately (or leave out the vegan egg and meal prep ahead of time) alongside avocado toast or rice and beans. Optionally dollop a generous portion of vegan sour cream and guacamole on the bell pepper boats.
