
Choc-Chip Sugar Cookies
When it comes to comfort foods, chocolate chip cookies top many people’s lists. These sugar cookies really hit the spot when you’re craving something sweet and go perfectly with a hot cup of tea. Cut them into rounds or break out the cookie cutters to make holiday themed treats like bunny shaped cookies for Easter. With few ingredients and a short preparation time, these sweet, crunchy chocolate chip sugar cookies make a perfect last minute gift or an easy snack for unexpected guests.
Ingredients:
- 125g vegetable oil spread/preferred butter replacer
- ½ a cup of raw sugar
- ¼ tsp rum essence or vanilla extract
- 1 flax egg (1 TBSp flax meal:3 TBSp warm water, mix and allow to sit for ten minutes)
- 2 cups of plain flour
- 1 tsp of baking powder
- Vegan chocolate chips- we used Sweet William brand
Method:
- Preheat oven to 150 degree Celsius/ 300 degrees Fahrenheit
- Grease or line 2-3 cookie trays
- Cream the butter replacer, sugar, and rum essence/vanilla extract
- Beat the flax egg in slowly until combined
- Add sifted flour and baking powder and mix into a soft dough
- Mix in choc chips
- Knead dough on a floured board and roll out into approximately 5mm/.2 inch thickness
- Cut out shapes and repeat with leftover dough
- Bake for about 15 minutes or until very light brown
This recipe makes enough dough for 24-36 cookies, depending on the shapes you use. Cacao powder can be added to taste for double choc cookies and because the baking time is so short, nuts or other ingredients can easily be added to the dough.
