Creamy Vegan Fettuccini Alfredo

If you find yourself craving warm, creamy, comfort-food pasta, read on! This recipe from Maysoun Fletcher of Easy Healthy Meals provides the creamy goodness of traditional Fettuccini Alfredo while incorporating some sneaky veggies into the dish.

So cozy on up with a warm bowl — this is the perfect meal for the whole family to enjoy on a chilly night.

Creamy Vegan Fettuccini Alfredo

Ingredients:

  • Frozen mixed bag of broccoli and cauliflower
  • Your choice of pasta

For the sauce:

  • 1 cup almond milk
  • 1/2 cup vegetable broth
  • 1/2 cup plant-based parmesan cheese
  • 2 tablespoons vegan butter
  • 1/4 cup flour
  • 1/4 cup vegan cream cheese
  • 1 teaspoon salt or to taste
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon pepper (optional)

Instructions:

  1. Cook pasta according to package directions.
  2. While your pasta is cooking, place the vegan butter in a medium saucepan on medium low heat. Once it is melted, add the plant-based parmesan cheese and mix well. The mixture will be clumpy. 
  3. Add in flour to the mixture and stir. Then, add in the veggie broth slowly and stir well. Add in almond milk slowly and stir well. 
  4. Add in all seasonings and stir for about 5 minutes. If the mixture is too thin, add in more vegan cheese and stir. If it is too thin, add in more almond milk. The mixture should look creamy. 
  5. Heat the bag of mixed broccoli and cauliflower in the microwave.
  6. Mix the sauce with the pasta and stir well. Stir in the broccoli and cauliflower. Enjoy!

    A tablespoon of salt is insanely way too much. Ruined the sauce, unfortunately. And I’m someone that usually loves my food on the saltier side.
