Crockpot Vegan Chili: Perfect for Super Bowl Sunday

One of the biggest parties of the year is almost upon us, Super Bowl Sunday. Millions of Americans will be tuned in on Sunday, February 3rd to see who takes home the coveted trophy. Parties will be thrown in many a home, including mine. Here’s a tasty crockpot vegan chili that is sure to please your guests.

Crockpot Vegan Chili Recipe

Ingredients

  • 2 14oz cans kidney beans
  • 2 14oz cans black beans
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 14oz can sweet corn
  • 2 14oz cans diced tomatoes (I like to use the fire-roasted kind for some heat to my crockpot vegan chili)
  • 2 14oz cans tomato sauce
  • 5-6 cups vegetable stock
  • 2 jalapenos, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon sweet paprika
  • 2 bay leaves
  • salt and freshly ground bell pepper to taste
  • vegan yogurt, avocados, lime, and tortilla chips to serve

Instructions

  1. Chop the onion and bell peppers and mince the garlic and chili peppers.
  2. Put all the ingredients in your slow cooker. Add the sweet corn, diced tomatoes, tomato sauce, and vegetable broth. Then add the cumin, sweet paprika, bay leaves, salt, and black pepper. Stir everything well.
  3. Cook on high for 6-8 hours.
  4. Serve hot with vegan yogurt, chopped avocados, jalapenos, lime, and tortilla chips. Enjoy!

    I was reading the recipe for vegan crockpot chili. In the instructions it tells you to mince chili peppers. I could not find that ingredient in the list
