DELICIOUS QUINOA WITH ASPARAGUS RIBBONS RECIPE
This recipe for quinoa with asparagus is so easy to make and it tastes great. Perfect for when you want to impress someone with your cooking prowess, so simply just want a quick but satisfying meal.
Ingredients
1 15-oz can chickpeas, rinsed
Zest and juice of 1 lemon
Kosher salt and Pepper
1 c. quinoa
1/2 c. tahini
1/4 c. fresh lime juice
1 tablespoon of vegan honey
1 c. packed fresh mint leaves
1 lb. thick asparagus
1/4 c. shelled pistachios, chopped
METHOD
- In a medium-sized bowl, mix the chickpeas, lemon juice and zest and some of the pepper and salt. It is best left in the fridge for a few hours to marinate and let the flavors soak into the chickpeas
- In a pot, cook the quinoa according to the packet
- Blend the tahini, juice of the lime, half a cup of water and one-quarter of a teaspoon of vegan honey. If it seems a little too thick, add additional water until it is smoother.
- With a vegetable peeler, shave asparagus into ribbons, peeling from the woody end toward the tip. In a bowl, combine cooked quinoa with asparagus ribbons, and marinated chickpeas. Sprinkle with pistachios and drizzle with tahini dressing. Serve your dish and watch it
disappear .
