Easy Fudgy Vegan Brownies

Everyone has a preference when it comes to brownies. Some like the gooey center. Others enjoy the crispy corner pieces. No matter what sort you are, this recipe is a must try.

These brownies from blogger Miriam of Meals By Miri pair perfectly with a cold glass of your favorite nut-milk, and are sure to become hit with your family in no time.

Easy Fudgy Vegan Brownies


  • 80g chocolate
  • 80g butter
  • 3 tbsp flax seed
  • 100g brown sugar
  • 200g sugar
  • 1 shot of espresso
  • 70g cocoa powder
  • 175g flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp vanilla
  • 60g almond milk


  1. Start by combining your flax meal and water and leave to rest for a few minutes. Melt your chocolate and butter in a bowl over a pot of boiling water. Whisk your flax mixture in with your sugars and gradually add your espresso, almond milk, salt, vanilla and chocolate + butter mixture.
  2. Sift your cocoa powder, flour and baking powder into the wet mixture and fold together with a spatula.
  3. Add the brownie batter into a square 20x20cm pan lined with baking paper and bake at 200C for about 25-30 minutes until a knife comes out clean when piercing it.
  4. Leave to cool before serving.

    OMG, I feel like I wanna bite these through my screen! My family and I are obsessed with vegan brownies. Once you try them, there’s no turning back. We prefer to pair them with a glass of plant-based milk. We could indeed enjoy these for all three meals. They taste like heaven. Highly recommend everyone to give these brownies a try.
