Easy Vegan Grilled Eggplant

Fire up the grill pan for this simple vegan recipe by food blogger Michala Kramer of Micadeli.

In no time you’ll have your eggplant grilled to perfection and ready for toppings. Garnish with hummus, pesto, parsley and tomatoes to make this dish pleasing for both the eyes and the stomach.


Easy Vegan Grilled Eggplant


  • Half eggplant, 3 slices
  • Handful of small tomatoes
  • 2 tbsp of hummus
  • 2 tbsp of green pesto
  • 2 tsp of parsley
  • 3-4 tbsp of olive oil
  • Salt and pepper


  1. Wash the small tomatoes and chop them in small pieces. Cook in 2 tablespoons of olive oil, salt and pepper on a grill pan or on the grill outside.
  2. Wash and slice the eggplant. Add the slices on the pan and cook for a few minutes on each side until grilled.
  3. Arrange the eggplant slices on a plate. Add hummus, green pesto, fried tomatoes and fresh parsley on top. Drizzle with salt and pepper and serve immediately.
