Five Minute Berry Mousse

This is a favorite in our household, because it’s so simple to throw together, and everyone loves it.

It works well as a dessert, breakfast, or even as a parfait layer, along with berries and granola. Yummy!

NOTE: If you don’t have a high-speed blender (a Vitamix or Blendtec), there will be some texture from the raspberry seeds.

If you desire a smoother texture (and just have a regular blender), try the following: Process the raspberries first, then run them through a mesh strainer. Finally, process the seedless raspberries with the other ingredients.

INGREDIENTS:

  • One 12.3 oz. aseptic pack of silken tofu, firm or extra firm
  • ½ cup maple syrup
  • 2 cups raspberries, fresh or frozen
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon sea salt

METHOD

Blend all ingredients in a blender or food processor (see note above if you don’t have a high-speed blender) until smooth. If desired, top with fresh berries. Enjoy!
