Fragrant Massaman Curry Noodles

This fragrant and vibrant little curry noodle dish is a hit. This can also be a one-pot wonder. Great after a busy day with the kids and you want something warm and comforting.

 This fragrant and vibrant little curry noodle dish is a hit. This will be a one-pot wonder. Most of all, these noodles are perfect for after a busy day when you need something comforting.

YOU NEED

  • Half an onion – diced
  • 2-3 cloves chopped garlic
  • 1 tsp turmeric (grated/ground)
  • 1.5 tsp ground cumin
  • 2tsp ground coriander
  • 1.5 tsp grated ginger
  • 2 tsp apple cider vinegar
  • 250 – 300 ml coconut cream
  • 1 heaped tbsp peanut (nut butter)
  • 1 tbsp tamari sauce
  • 3 medium brushed potatoes
  • 1 small sweet potato
  • 3/4 cup cherry tomatoes (cooked then squished).
  • 1/2 cup green peas
  • 1 cup brown rice vermicelli noodles
  • Fresh coriander to serve.

METHOD

  • Parboil potatoes.
  • Sauté onion & garlic in coconut oil.
  • Add spices and allow to cook till fragrant.
  • Please tomatoes and allow them to soften then squish them to release juices.
  • Add parboiled potatoes to coat with spices and tomatoes.
  • Toss in peas
  • Pour in coconut cream (you want it very ‘saucy’)
  • Add peanut butter and tamari sauce
  • Stir through raw noodles till soft then serve.
  • Fresh coriander to serve.
  • Chilli optional.

*hint – In addition, make sure there’s enough sauce/liquid to cook the noodles. Add extra coconut milk if necessary.
