
Garlic Bread Crusted Brussel Sprouts
Brussel sprouts are among one of the more popular of the cruciferous vegetables. They have great benefits like high nutrients, but also low calorie so it’s a great vegetable that you don’t have to get enough of. They can take on tons of different flavors making them a great side or even a main dish. Now, if you are a bread head like me garlic bread is a top choice in flavor. Garlic Bread Crusted Brussel Sprouts
Ingredients:
- 1 lb.
brusselsprouts , stems cut off and halved - 3 pieces of sliced whole wheat bread
- 2 tbsp. nutritional yeast
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/4 tsp salt
- 2 tbsp vegan butter, melted

Directions:
- Preheat your oven to 400 degrees F and grease a casserole dish with spray oil or vegan butter.
- In a large pot, bring 4 cups of water to a boil. Add in brussel sprouts and cook about 8 minutes, cook just enough until sprouts are tender. Drain and add into the prepared casserole dish and set aside.
- In a food processor, add sliced bread, nutritional yeast, garlic powder, italian seasoning, and salt. Pulse a few times to get it started, then process on high until it crumbled.
- Sprinkle breadcrumbs on the brussel sprouts and then pour melted butter on top. Bake in the oven for 15 minutes until topping is crispy but carefeul not to burn. Remove from oven and serve while hot.
