Healthy Vegan Zucchini Rolls

Healthy Vegan Zucchini Rolls


Serves two

  • 1 large zucchini
  • 2 onions
  • 2 ½ tbsp olive oil 
  • 1 tbsp chopped coriander
  • 2 tbsp chopped dill 
  • 2 tbsp chopped chives
  • ¼ cup quinoa 
  • 1 clove of garlic
  • Salt & pepper
  • ½ cup tomato sauce
  • ½ avocado for garnish 
  • 6 cherry tomatoes


  1. Preheat the oven to 180°C.
  2. In a saucepan, add 1 tablespoon of olive oil and sauté onions for 10 minutes on medium-low heat until caramelized. Transfer the onions to a bowl. 
  3. In a small pan, add 1/4 cup quinoa and 1/2 cup water and cook for 15 minutes. When quinoa it is cooked, transfer it into a bowl. Add fresh herbs, coriander, dill, minced garlic, chives and salt and pepper to the bowl. Mix all the ingredients. 
  4. On a cutting board, cut zucchinis into 2 cm circles. 
  5. Prepare a baking pan and put zucchini slices into the pan. It should yield 12 pieces. Add 1/2 cup tomato puree, salt, and pepper and pour the sauce over the zucchinis. 
  6. Bake in the oven for 20 minutes. 
  7. Take out the baking pan and put a spoonful of quinoa and herbs mixture into each zucchini slice. Repeat with the remaining zucchini and mixture.
  8. Slice the avocado and cherry tomatoes and add to top of the zucchini slices. 
  9. Sprinkle with some coriander and olive oil. 
  10. Serve and enjoy!
