
Homemade Vegan Peanut Butter Cups
Peanut butter and chocolate — a classic combination for good reason. (Because it’s delicious.)
This recipe, from Nicolette of Basil & Biceps is a can’t-lose option for Valentine’s Day. Whip them up for your sweetie, or pack them for a Palentine’s potluck and you’re sure to impress.
That said, you might want to double the recipe for group events.

Homemade Vegan Peanut Butter Cups
Ingredients
- 1 1/2 cups vegan chocolate chips
- 1/2 cup (you may need more or less) creamy peanut butter, only ingredient should be peanuts
- 1 tbsp Nutiva coconut oil
Assembly:
- In a microwave safe bowl, mix chocolate chips and coconut oil. Heat in intervals of 30 seconds until chocolate is smooth
- Line muffin tins with muffin liners.
- Pour about 1/4 inch of chocolate into bottom of muffin liners
- Let harden in freezer for 15 minutes
- Remove and scoop as much peanut butter you want in the middle!
- Pour more chocolate on top
- Place in freezer to set, and enjoy!
