Looking for a quick school breakfast for your little vegans?
Our kids eat oatmeal, oatmeal, and sometimes oatmeal with strawberries. We’re pretty fancy around these parts. Although, there has been some whispering of a mutiny lately, so for a quick back to school breakfast, we’re going to jazz it up a lot!
The Quick School Breakfast
- 3/4 c. chia seeds
- 2 1/4 c. nut milk
- 1/2 c. cacao powder or unsweetened cocoa powder
- 1/3 c. maple syrup
- 1 tsp vanilla extract
- In a bowl, mix the seeds, soy milk, cocoa, maple, and vanilla together.
Sit overnightcovered in the fridge, or if you’re pressed for time, two hours should be enough.
2. After chilling, blend everything on high until it’s a smooth texture, if it doesn’t seem sweet enough that will have everyone coming back for more. Add a little more syrup. Evenly pour the mix into six small school cups.
And that is it, you have one quick school breakfast, that everyone will love!
