Mouth watering Vegan Mushroom Gravy !

This delicious vegan mushroom gravy is a must have at your holiday feast! Slather it over mashed potatoes, veggie wellington or lentil loaf. Just two words of warning, make extra!!

Vegan Mushroom Gravy

Ingredients

  • 2 tablespoons vegan butter or olive oil
  • 1/2 medium onion, diced
  • 2 garlic cloves, minced
  • 8 oz mushrooms, diced
  • 4 tablespoons all-purpose flour
  • 3 cups low sodium vegetable broth
  • 3/4 teaspoon salt, more to taste
  • Fresh ground pepper, to taste
  • 3/4 teaspoon soy sauce
  • 1 teaspoon nutritional yeast

Instructions

In a large pan over medium heat, add butter or oil and a pinch of salt. Sauté the onions & garlic until translucent & browned about 4-6 minutes.
Add mushrooms & sauté until browned, about 5-7 minutes. Stir in remaining salt & pepper.
Add flour and combine well. Stir & cook for 1 minute.
Slowly stir in vegetable broth and nutritional yeast and bring to a simmer. Add soy sauce. Lightly simmer for 5-7 minutes, until desired thickness.
Taste for salt and add more as needed.
