Red Velvet Truffles

These little decadent red velvet truffles take only minutes to make and are packed full of goodness. They go down as an absolute treat in lunch boxes, at parties, in morning teas, and in a mid-afternoon snack.
Ingredients:
- 400g black beans
- 1/2 cup sultanas
- 3 heaped Tbsp cacao
- 2 Tbsp beetroot powder (or 3-4 Tbsp finely grated beetroot – squeeze to remove excess juice)
- 1.5 Tbsp coconut oil
- 3.5 Tbsp sunflower seed meal
- 1 tsp vanilla
- 1.5 Tbsp real maple syrup
Method:
- Add all ingredients to a food processor and blitz till well combined.
- Roll into balls and dust with cacao or beetroot powder.
- Pop in the freezer for 20 mins till set and eat or refrigerate.
