
Vegan and Gluten Free Cake With Vanilla Frosting
There is nothing more delicious than cake, unless it’s a vegan and gluten free cake with lashings of vanilla frosting! This cake is so delicious, it has won its own medal!

Wet Ingredients
1 cup of unsweetened coconut milk
⅓ cup of vegetable oil
½ tsp of Vanilla extract
Dry ingredients
1 ½ cup of Pillsbury Gluten free flour blend
1 cup of vegan sugar
½ tsp baking soda
½ tsp baking powder
Vegan Vanilla frosting
1/2 stick of vegan butter
¼ cup of coconut butter
½ tsp vanilla extract
2 ½ cups of vegan sugar
⅓ cup of vegan whip cream
Vegan and Gluten Free Cake Directions
Preheat oven to 350.
Spray 2 pans using a gluten free pan spray
Whisk all liquid ingredients together.
Whisk all dry ingredients together. Add wet to dry ingredients in a mixing bowl and stir until well combined.
Pour batter into pan and bake for 25 to 30 minutes or if toothpick is inserted and comes out clean.
Let completely cool on wire rack before frosting
Let’s make frosting
In a mixing bowl on low speed, whip coconut and vegan butter until very smooth. Add in 1 cup of sugar at a time and beat well after each adding of sugar. Add extract. Now fold in whip cream and refrigerate until ready to frost cakes. Makes 10 servings.
