Vegan Banana Zucchini Muffins Recipe

These little muffins are so scrumptious and are the perfect little lunchbox fillers.

YOU NEED

  • 1.5 cups wholemeal spelled flour
  • 1/3 cup rolled oats
  • 1/2 cup coconut oil
  • 2 large ripe bananas
  • 1/2 cup grated zucchini
  • 1/3 cup coconut sugar
  • 1-2 tsp vanilla extract
  • 2 tsp cinnamon
  • Pinch of pink salt
  • Handful of currants
  • 1 tsp baking powder

METHOD

1. Mash bananas and stir through melted coconut oil, coconut sugar, and vanilla.

2. Mix in the dry ingredients and pour into mini muffin trays to make approx. 20 muffins.

3. Cook at 175*C (350*F) in the oven for 16-18 mins.
