Vegan Caesar Dressing Recipe

I love this vegan caesar dressing using cashews and olives. The cashews gives it that nice thick, creamy consistency, while the olives add a salty little zing. Bear in mind that this is a make-ahead dressing as cashews need some time to soak for easier blending.

Ingredients:

  • 1 cup raw cashews
  • 1 cup non-dairy milk
  • 2 tablespoons lemon juice
  • 3 cloves garlic
  • 2 teaspoons Dijon mustard
  • 5 Kalamata olives
  • Salt & Pepper to taste

  • Soak the cashews for at least 4 hours. The longer you soak them, the easier they will blend into the final dressing. When ready to make, drain the soaking liquid and then…
  • In a high-powered blender or food processor, combine all ingredients and let it run for several minutes. Until you have a creamy sauce with no chunks.
  • If the sauce is too thick slowly add several tablespoons of water at a time and blend until it has the perfect salad dressing consistency.
  • Cover and refrigerate for four hours.
  • Enjoy over a salad of romaine lettuce and croutons.
