Vegan Caesar Dressing Recipe
I love this vegan caesar dressing using cashews and olives. The cashews gives it that nice thick, creamy consistency, while the olives add a salty little zing.
Ingredients:
- 1 cup raw cashews
- 1 cup non-dairy milk
- 2 tablespoons lemon juice
- 3 cloves garlic
- 2 teaspoons

- In a high-powered blender or food processor, combine all ingredients and let it run for several minutes. Until you have a creamy sauce with no chunks.
- If the sauce is too thick slowly add several tablespoons of water at a time and blend until it has the perfect salad dressing consistency.
- Cover and refrigerate for four hours.
- Enjoy over a salad of romaine lettuce and croutons.
