Vegan Caramel Apple Pie Donuts Recipe

As a kid, since we were still in school and didn’t have a fall break, going to fall festivals was something to definitely look forward to. Bobbing for apples, pumpkin picking, and Halloween costume contests made this a special holiday. But the one nostalgic treat that pops into my head is a caramel apple on a stick.
The apple was always crisp and the caramel was the kind of chewy that stuck to your teeth. These donuts are a great remake of the flavors that I remember so vividly. If you want a sweet donut that is light, fluffy, and easy to make this a great recipe to keep for the fall season. They are the perfect combination of sugar and spice and everything nice.

For the vegan donuts
- 1 cup unbleached all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup plant based milk
- 1 tsp white distilled vinegar
- 2 tbsp. coconut oil, melted
- 1/2 cup unsweetened applesauce
- 1/4 cup brown sugar
- Preheat oven to 350 degrees. Grease a donut pan and set aside.
- In a mixing bowl; sift flour, baking powder, and salt together.
- Whisk together milk, vinegar, coconut oil, applesauce, and brown sugar. Stir until well combined.
- Pour into the flour mixture and stir until it forms a dough. Do not over mix.
- Add 3 tbsp of the mixture to each donut mold. With your finger or a spoon evenly distribute dough to make it even and smooth.
- Bake your vegan caramel apple donuts 10-12 minutes. Let cool while you make the glaze.

For the caramel glaze
- 1/4 cup vegan butter
- 1/2 cup brown sugar
- In a small saucepan melt butter over medium heat. Whisk in brown sugar and let simmer until bubbles form.
- Remove from heat. Allow to cool and thicken (about 5 minutes).
- Dip top of your vegan caramel apple donuts into the caramel glaze or pour over donuts.
