
Vegan Meals for the Crock-pot
Looking for some easy vegan meals the whole family will love? Try these tasty crock-pot recipes!
I received my crock-pot as a wedding gift over 12 years ago and it’s seen better days, but it’s still going strong. I must admit though, when I first went vegan several years ago, my trusty old crock-pot fell out of favor. I’d pull it out for processing fall harvest fruits (apple butter anyone?) but aside from that, it wasn’t seeing much action. Now that I’ve got two kids, and my oldest is in extra curricular activities several days a week, trying to get weeknight family meals on the table was becoming a serious challenge. So I decided it was time to find some new vegan recipes, dust off my trusty old crock-pot, and hopefully, save my sanity.
Below you’ll find a few of the recipes my family has been enjoying. I hope your family will enjoy them too.
Crock-pot Sweet Potato Stew
First off we have this tasty stew by Plant Based Mama Connecticut. I love this recipe because it’s loaded with nutrients, and plant based protein which makes it extremely satisfying. The prep time is minimal so you can have this ready to go in just a few mins. Tip: I skip peeling my sweet potatoes. It saves time, plus the peel is packed with nutrients like Beta Carotene, Vitamin C, Vitamin E, Folate, Fiber, Potassium, and Iron.
Crock-pot White Quinoa Chili
Next up we have a delicious White Chili by Alyssa from Simply Quinoa. I love this recipe because it’s a nice change from the typical tomato-based chili. It has all the comfort and spice you want in a chili but the flavor is brighter. I also really enjoy the creaminess of this recipe. It’s a very cozy meal, perfect for a gloomy winter day.
Vegan Sloppy Black-Eyed Peas
I don’t know about you, but Sloppy Joe’s are the epitome of comfort food when I think back on my childhood. This plant based version from Craving’s of a Lunatic hits the spot!
Vegan Gluten-Free Crock-pot Lasagna
And last but not least, one of my favorite dishes of all time, LASAGNA. What could be better than a plant based, gluten free version that goes in the crock-pot! This recipe from Vegan Chickpea is one of my favorites! I love all the veggies included in this recipe too. Bonus: You can swap out the veggies for whatever you have on hand.
