Vegan Red Quinoa Chickpea Curry

Jana’s vegan curry recipe is easy to make and perfect for the whole family. Both chickpeas and red quinoa are wholesome sources of protein which ensures that can help you get the most out of every serving.
- 100 g quinoa
- 200 ml canned coconut milk
- 200 ml water
- curry powder
- 150 g cooked chickpeas
- 2 tbsp tomato puree
- 100 g cherry tomatoes
- 1 clove of garlic
- Put the quinoa in a pot with the coconut milk and the water and bring it to a boil.
- Chop the garlic and the tomatoes and add it to the quinoa together with the chickpeas. Let it simmer for about 20 minutes.
- Season with curry powder, salt and stir in the tomato puree at the end of the cooking time.
