Vegan Sweet Potato And Kale Mac & Cheese
If you love curling up with a warm, hearty bowl of mac & cheese, we’ve got the meal for you! This recipe from health coach and recipe creator Ilene of The Colorful Kitchen brings a healthier take on the classic comfort food.
Combining the creaminess of classic mac & cheese with two sneaky servings of veggies, this is the perfect weeknight meal for kids and adults alike.

Vegan Sweet Potato And Kale Mac & Cheese
Ingredients
- 1 large sweet potato
- 1 package of pasta of your choice
- 1 cup non-dairy milk of your choice
- 2 cloves garlic
- 1 tbsp dijon mustard
- ¼ cup nutritional yeast
- 2 tbsp tamari
- 1 tbsp olive oil
- salt and pepper to taste
- 2 cups kale, shredded
Instructions
- Preheat oven to 400°F. Poke holes in sweet potato and wrap in foil. Bake until tender (45- 60 mins).
- While the potato bakes, prepare pasta according to instructions on container.
- Remove the sweet potato from oven and peel away skin when it’s cool enough to handle.
- Place the sweet potato in a blender with all ingredients (except the kale) and blend until smooth.
- In a large pot, heat the shredded kale with a tablespoon of water until wilted. Stir in sauce and pasta and heat until warm.
