Vegan Thai-Inspired Curry Noodles

A simple curry dish sure to please even the least adventurous eaters.

This flavor-packed meal, from Sarah Murphy of Instagram account Transform With Veggies, is an easy go-to dinner, packed full of simple ingredients and quick to pull together.

Vegan Thai-Inspired Curry Noodles

Ingredients

  • 1-2 TB coconut oil
  • 1 tsp sea salt
  • 2 tsp garlic powder
  • 2 TB red curry paste
  • 1/4 to 1/3 cup unsweetened peanut butter (try to avoid the ones w/ added oil as well)
  • 1 can coconut milk (full fat or light)
  • 2-3 cups broccoli chopped
  • 1 red bell pepper, deseeded and chopped
  • 3-4 chopped and peeled carrots
  • 2 cups snow peas
  • 1/2 cup water
  • Dash ginger powder
  • Dash crushed red pepper (optional for spice)
  • 1/2 package rice noodles cook according to package

Instructions

  1. Prepare and chop all veggies.
  2. Heat pan over medium to medium-high heat. Add coconut oil.
  3. Add chopped red bell pepper, cook for 2 mins.
  4. Add chopped carrots & sea salt, mix well. Cook for about 2-3 mins, then cover with lid.
  5. Steam for about 8 mins. Be careful here, you might need to stir once in a while depending on your heat and pan.
  6. Remove lid, add chopped broccoli. Add 1/2 cup of water and cover with lid. Let it steam for about 5-10 mins.
  7. Remove lid and check with a fork to see if carrots are cook through. If so, continue otherwise steam for a little longer.
  8. Add can of coconut milk. Mix well. Add garlic powder and curry paste. Mix well. Add peanut butter, mix well.
  9. Cover and bring to a simmer.
  10. Add a dash of crushed red pepper (optional) & ginger. Mix well.
  11. Add snow peas, mix well and cook until they are tender but still crunchy.
  12. Last, add your cooked rice noodles, mix well.
  13. Add Sriracha or another hot sauce if desired, and enjoy!

Notes

The pulpy white inner cavity of the bell pepper is sometimes hard to digest for some individuals, make sure to remove.
