Whip Up A Batch Of Vegan Irish Cream This Christmas
I’ve been busy lately posting all of my vegan Christmas recipes for you to try out. My family loves feasting, we also love cocktails, especially over the holiday season. There are always people dropping in over the Christmas so I like to have lots of yummy drinks to offer. One of my go-to Christmas indulgences is Vegan Irish Cream and since Bailey’s have released a plant based version, I like to make my own. It’s great to whip up a big batch and pour into mason jars to give as gifts too.
Vegan Irish Cream Recipe
- 1 can light coconut milk
- 1 can full-fat coconut milk
- 1/2 cup brown sugar
- 1 cup strong coffee
- 2 tbs Hershey’s chocolate syrup
- 1 cup Jameson Irish Whiskey, (you can use any Irish Whiskey)
- small pinch of salt
Directions To Make Vegan Irish Cream
In a large pot, whisk the cans of coconut milk together. Then whisk in the sugar. Bring to a low boil, stirring frequently. Simmer for about 8-10 minutes, while still stirring, until it cooks down and thickens a little.
Remove the pot of milk and sugar from the heat and stir in coffee and chocolate syrup. Add a little pinch of salt and then pour in the good stuff, the Jameson. A full cup of whiskey makes it pretty strong, so add a little less if you like.
Pour into mason jars, seal and store in the refridgerator, should be good for a couple of days. The whiskey, coffee and chocolate syrup settles to the bottom of the jar, so give it a good stir or a shake before using.
Serve over ice or in coffee and enjoy!
