6 Ingredient Vegan Almond Coconut Granola

Almond coconut granola is a great mason jar staple to keep in your pantry. Oats, in general, are a great way to start your day since they are filling and are an awesome source of fiber. My kids love oatmeal, but sometimes I like to mix it up and give them the crunchy version over their coconut yogurt. Provides the same great taste but different texture to mix it up a little. This vegan almond coconut granola recipe has a lot of good fats plus minerals from the coconut are a good bonus. It’s easy to make with minimal ingredients and I kept the sugar ingredients to a purer form. This granola only lasted a few hours in my house so just a small suggestion I would go ahead and make a double batch.

6 Ingredient Vegan Almond Coconut Granola

Ingredients:

  • 1 1/2 cups old fashioned rolled oats
  • 1/2 cup raw unsalted almonds, chopped
  • 1/4 cup unsweetened coconut flakes, chopped
  • 1/2 cup chia seeds
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar

Directions:

  • Line a cookie sheet with parchment paper and pre-heat your oven to 325 degrees.
  • In a medium bowl, mix together oats, almonds, coconut flakes, and chia seed. Set aside.
  • set your stove to medium heat. In a small sauce pot add maple syrup then whisk in coconut sugar. Once mixture begins to boil remove from heat and let cool. It should cool enough to be gel-like when moving around in the pot.
  • Pour mixture over oats and fold in until oats are completed coated.
  • Spread oat mixture out onto your lined cookie sheet and bake for 25 minutes. Midway through baking give the granola a little shake on the pan and rotate for even cooking.
  • When removed from oven let cool completely. Don’t worry it will get it’s crunch as it cools.
  • Enjoy on top of your favorite n-dairy yogurt or in a bowl with some plant milk.
