Banana & Raspberry Muffins
These little banana and raspberry muffins are lovely lunchbox additions (or great for the grown-ups with a cuppa).
Ingredients
- 1.5 cups wholemeal spelt flour
- 1/3 cup rolled oats
- 1/2 cup coconut oil
- 2 large very ripe bananas / 3 small
- 1/2 cup grated zucchini
- 2 T real maple syrup
- 1-2 tsp vanilla extract
- 3/4 cup frozen raspberries
- Pinch of pink salt
- 1 tsp (aluminum-free) baking powder
Method
- Mash bananas & stir through wet ingredients.
- Mix through the dry ingredients and pour into mini muffin trays to make approx. 20.
- Bake at 175C in the oven for 18 mins.
- Let them cool on a wire rack before digging in!
