Easy Vegan Black Bean Chili Bowl

How about this black bean chili bowl?
So simple and scrumptious. Since I started eating a plant-based, vegan diet, this has been one of my favorite go-to meals and the kids love it too. I don’t add chili to it until I’ve served up the little people’s plates.
It’s also a really good dish for small kids, packed with nutrients and all that goodness they need. It’s one recipe to keep on hand, especially for the cold winter nights, when we need something to warm us up and fill that spicy void.
I’d been making this for a while before becoming vegan – I always enjoyed a veggie meal. This is super easy and tasty.
YOU NEED
- 1 medium sweet potato
- 1/2 onion
- 2 cloves garlic
- 1 tsp ground cumin
- 1 tsp cinnamon
- Handful of chopped fresh coriander
- Optional fresh chili, chili powder, or cayenne pepper for some heat.
- 400g organic black beans
- 1/2 red capsicum
- 1/2 green capsicum
- 4 large vine-ripened tomatoes
- 1 tbsp of organic tomato paste
- 1 tsp apple cider vinegar
- Salt to taste
METHOD
Dice sweet potato and steam or fry in coconut oil till beginning to soften, add onion and garlic and saute for a few minutes, add spices and cook off till aromatic, add black beans and capsicum, chopped tomatoes, and tomato paste (i usually add a couple of tbsp of water).
Allow simmering for about 10 mins. Stir through apple cider vinegar and add a pinch of salt and your chopped coriander towards the end. Ready to serve.
