Garlic Whole Grain Flour Tortillas

As a family that has tacos at least once a week, we love having fresh tortillas right out of the skillet. Tacos are such a fun dish because the possibilities are endless. And since we use such a no-brainer recipe for tortillas, it gives us more time to focus on creating new ideas to fill them. This garlic whole grain flour tortillas recipe is such a flexible and easy recipe because depending on your meal you can change the size of the tortilla to meet your needs. Whether you are making tacos, burritos, or enchiladas this recipe can do it all. These tortillas are light, fluffy, and roll up perfectly without breaking. You can make them crispy or soft with just adjusting the cook time. It doesn’t get much better than that.

Ingredients

  •       2 cups gluten free whole grain oat flour (sifted)
  •       1 cup tapioca flour (sifted)
  •       2 ¼ cups water
  •       1 tsp garlic
  •       ¼ tsp salt

Directions

  1.       Place all ingredients in a large mixing bowl and whisk until well combined.
  2.       Heat a nonstick skillet over medium heat. Once skillet is hot, pour ¼ – ¾ cup batter into center of the pan. Immediately, spread batter in a circular motion with measuring cup or roll pan in circular motion to create the thickness of choice. (street taco style tortillas: ¼ cup – taco style tortillas: ½ cup batter – burrito style tortillas: ¾ cup batter.)
  3.       Cook for 3 minutes and flip your whole grain flour tortillas on the other side for an additional 3 minutes. ( for crispier shells heat for 5 minutes on each side.)
  4.       Use immediately or to store, place on a cooling rack for 10 minutes to allow tortillas to completely cool off.

Storage:

Place in an airtight container and keep in the refrigerator for up to 5 days. To reheat, place whole grain flour tortillas in a warm skillet or wrap in a wet paper towel and microwave for 10 seconds.
