Easy Mediterranean Vegan Quinoa With Chickpeas

Serving Size: 6 portions
Total Time: 30 Minutes
Cost: Less than $15

Ingredients

  • 2 cups vegetable broth
  • 1 cup quinoa, uncooked
  • 3/4 cup chickpeas
  • 1/2 cup olives, chopped
  • 1/2 cup tomatoes, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley
  • 1/4 cup olive oil
  • 1 Tbsp lemon juice
  • 2 cloves of garlic, minced
  • 1 tsp salt
  • 1 tsp pepper

Method

  1. Start by cooking the quinoa according to the package but substitute the vegetable broth for the water.
  2. When it is done and fluffy, add to a large bowl. Add the rest of the ingredients and stir.
  3. Plate up your Mediterranean vegan quinoa and enjoy!
