Vegan American Chop Suey Recipe
Ingredients
- Rice noodles (boiled)
- 1 large chopped capsicum
- 1 chopped onion
- Few chopped cabbage leaves
- 2-3 chopped baby corns
- 2-3 chopped pineapple slices
- 1 chopped carrot
- 10-12 finely chopped garlic cloves
- Finely chopped spring onions
- 1/2 a cup tomato ketchup
- 1/4 cup red chilli sauce
- 2-3 tablespoons soy sauce
- 1 tablespoon vinegar
- 1/2 tablespoon of sugar
- 2-3 tablespoons of cornflour mixed with one bowl of water
- Vegetable oil to cook
- Salt to taste
Instructions
- Heat a little oil in a wok. Add garlic and onion to it, followed by all the other vegetables mentioned in the ingredient list.
- Stir fry the vegetables. Add some salt (as per your taste) and 1/2 a tablespoon of sugar to it. Now add all the sauces and stir for few seconds.
- When the vegetables are almost cooked, add water as per the gravy thickness you prefer. Next pour the cornflour mixture carefully, without letting it form clunks. Bring to boil and cook until the gravy has thickened.
- Heat vegetable oil in another pan and deep fry a hand full of noodles. Take care to not let them turn dark in color.
- Serve vegetable gravy over fried noodles. Sprinkle chopped spring onions.
