Eggless Vegetable and “Sausage” Tofu Quiche

If you are wondering about what to cook for the weekend Sunday brunch, here is an easy vegetable tofu quiche recipe.

Brunch can be a little daunting for vegans because there is a lot of focus on meats, cheeses, and especially eggs. If you are ever invited to a friends house for a Sunday brunch session the most you can hope for is some fruit and bottomless mimosas. But if you want to contribute something delicious for everyone to eat I suggest this Eggless Vegetable and “Sausage” Tofu Quiche dish. The tofu is moist and fluffy plus adding the vegetables and lean veggie sausage makes this dish a light one. The best part is if you have leftovers it saves really well without smelling up your fridge overnight because there are no eggs.

Eggless Vegetable and “Sausage” Tofu Quiche

Ingredients:

  • 14 oz firm tofu
  • 1/2 cup plain unsweetened plant milk
  • 8 oz lean veggie sausage
  • 1 cup fresh spinach
  • 1/2 cup red pepper, diced
  • 1/2 cup green pepper, diced
  • 1/2 cup vegan shredded cheese
  • 1 tbsp. garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1 – pre-made vegan pie crust

Directions:

  1. Preheat oven to 400 degrees.
  2. Rinse tofu and cut into cubes wrap in a stack of layered paper towels to soak up excess water for about 15 minutes. Change out paper towels when soaked through.
  3. While tofu is draining, add sausage to a non stick pan over medium heat and cook until brown.
  4. Remove sausage and add 2 tbsp. of water and sauté red peppers, green peppers, and spinach until peppers are soft, spinach is wilted, and water has evaporated.
  5. In a food processor, add tofu, plant milk, cheese, garlic, salt, and paprika. Blend until well combined.
  6. Pour tofu mixture into a bowl, and fold in sausage, spinach, and peppers.
  7. Pour into the pie crust and spread until evenly distributed. Bake in the oven for 35-40 minutes until tofu has set. Remove from the oven and let stand for a few minutes before serving.
