Kick-Butt Creamy Cashew Sauce

There’s nothing tastier than coming home from a blustery day, and having your own home made dinner, or even on a summer’s day, sitting out in the back garden, sun on your face, slight breeze in your hair, and the most epic vegan sauce that the vegan goddesses can dream up! Are your ready for a treat?! This creamy cashew sauce is so epic, that we will make it minimum twice a week. Sometimes we have to hide it in the freezer when guests are coming over, to keep all the little hands off it, and from eating it all.

You can change it up to make it just as addicting for you!
Ingredients
8 ounces of unsalted cashews
2 tablespoons of nutritional yeast (Nooch of the gods!)
1/4th of a table spoon of garlic powder OR 2 fresh garlic cloves.
A pinch of salt
1-2 cups of water (The longer you soak the cashews the less water you need)
OPTIONAL:
Hot sauce
Cajun seasoning
Apple cider vinegar
Extra garlic – cold beer and some good friends!
Prep:
Soak 8 ounces of unsalted cashews for at least 2 hours. The longer you soak the creamier the sauce.
I do not recommend soaking them for more than 24 hours, they just turn to mush then.
Making the Sauce:
Drain and rinse the cashews then place in your blender, (I have a Ninja Blender 1200 and it works great!)
Add about half a cup of your water
Add Nutritional yeast, garlic and salt. If you are adding any of the optional items add them now and they are just to taste, so make it how you like it.
Start blending on the liquid setting. Check the consistency of the sauce and add more water if needed.
Taste the sauce and add more of your optional items if you wish.
Blend up any extra items you put in and enjoy!
It’s that simple! I love this sauce on veggies, baked potatoes, and especially pasta! I really enjoy mixing it with a traditional pasta sauce to create a vegan creamy marinara for spaghetti. It’s such a versatile type sauce, that there hasn’t been many instances where i didn’t think it would pair well with a dish. The kids absolutely love having it drizzled over pasta with vegetables. it also gives a kick to any bland dish, so if you’re on a diet, this is absolutely one of those sauces that you should check out. Just be careful of the calorie count in the cashews. They can add up after a while.
