Vegan Pumpkin Dessert Recipe

Ingredients

  • Peeled Pumpkin Cut Into Small Pieces 1/2 Kg
  • Brown Sugar 1 cup
  • 3/4 inch CinnamonĀ 
  • Few strands of saffron (soaked in water overnight)
  • Water 75 ml
  • Vegan butter 2 tablespoon
  • Almond Flakes 1 tablespoon
  • Coconut Shavings 1 tablespoon
  • Dried Rose Petals (crushed) 1 tablespoon

Instructions

  1. Boil pumpkin with cinnamon in a saucepan until tender. Drain the water and keep aside.
  2. When the boiled pumpkin cools down, mash it with a spoon.
  3. Take a wok and heat vegan butter over low flame. Add pumpkin to it and saute it for a while. Keep stirring or the pumpkin would stick to the base of the wok.
  4. Continue stirring for about ten minutes till the pumpkin puree turns dark in color. Allow it to reduce to a thicker consistency.
  5. Add sugar and saffron to the mix and keep stirring over low flame till it attains a glossy amber color.Ā 
  6. Turn the heat off and serve hot. Sprinkle some dried crushed rose petals over it and garnish with coconut and almond shavings.
